Nutella Cake in a Mug w/ Delicious Star Butter Olive Oil Instead of Butter

I am very excited to share a new recipe with you today using Star Butter Olive Oil instead of butter. As you know our family loves sweets and so we do a lot of baking. It doesn't even have to be a holiday or special occasion, as long as we are all together it's enough of an occasion. As soon as we all arrive someone (usually China or Jack) brings out the makings for a cake or brownies and starts baking away. This is how we bond, over something chocolately and sweet and a big glass of cold milk. But what happens when I am at home and I would love that same gooey, chocolately goodness and it's just me and Julius? I can't make a huge pan of brownies or a cake just for him and I. I would then eat the whole thing if I did this, and I would thoroughly enjoy it, BUT it would not be good for my body or my acne. 

I have found the most wonderful alternative. This is a way to enjoy that same gooey, warm, chocolate goodness and not have to bake an entire cake, or even turn on the oven! How amazing is that?

Beyond amazing I tell you!


Okay so everyone knows it's healthier to cook and bake with olive oil versus butter or margarine. I know this because my step dad has ingrained it in us for years and he always makes an effort to have us substitute it any time we can. But I know that when I am baking and cooking certain items, I want that buttery flavor to be there. With Star Butter Flavored Olive Oil, you get that delicious buttery flavor but with all of the benefits of olive oil. This little bottle of Butter Oil is now going to be one of my best friends. They made is so easy to figure out how much to use by adding a conversion chart to their bottle, so there is no guess work involved. 


Recipe:  for one medium sized mug 


  • 1/4 cup flour
  • 5 Tbsp sugar
  • 2 Tbsp cocoa powder
  • 1 egg
  • 3 Tbsp Star Butter Oil
  • 3 Tbsp nutella
  • Dash of vanilla 
  • 1/3 Teaspoon baking powder

Directions: 
Mix all ingredients into your mug and stir until you see no more lumps. It's slow going at first but after a few minutes everything gets nice and blended. Cook time will vary depending on your microwave. Using a toothpick after 1 1/2 minutes check your cake, if it still needs more time add another 30 seconds and check in between. Mine took 2 1/2 minutes.



As long as your toothpick comes out nice and clean your cake should be done. There will still be a little gooeyness in spots but it is better to pull it out a tad bit underdone that to overcook it because then it gets very dry. You can serve as is or add some toppings like ice cream, fruit, whipped cream or even candy. In the picture at the top of the post we added whipped cream and sprinkled some Abuelita  Chocolate Powder on top for extra goodness.

This is easy enough to make everyday, so watch out for that, you might just get addicted like I did and seriously want to make one every night :) I say next time you are about to sit down to watch a movie you should pop one of these babies in the microwave and share that treat with your boyfriend/girlfriend. They will love you for it!
