Baking Ideas for the Holidays : M&M Cookies

It's December 5th already and there is so much to do. Today I took some time off to do some baking for some special people I am going to see over the weekend. I am going to a small get together and I want to bring each person a little token and though that baking cookies that would be yummy and sweet would be a nice little treat for each of them. My only worry is that I am not really a cookie maker, at least not a good cookie maker, I have yet to make a cookie that hasn't burned. Till today! Today I made some M&M's cookies that actually came out perfect, well not perfectly shaped but really good and cute too!


The first thing I did was hit my local Super Walmart which was super stocked with M&M's. I bought a bag of both Peanut M&M's and Plain M&M's. The plain were for the cookies and the peanut ones for eating while baking the cookies!


Then I went home to look over some recipes that I have stored on my tablet. I wanted to make a cookie that would be rich, buttery and use brown sugar. Hoping that this time I would successfully make a cookie that wasn't half charcoal I set off on my task of making my special gift cookies.


2 1/2 dozen M&M Cookies
  • 2 cups + 2 tablespoons all-purpose flour
  • 3/4 cup (1.5 sticks) salted butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup M&M's
  • 1/4 cup butter oil
directions:
Preheat oven to 325F degrees. Mix all ingredients with an electric mixer, I have a hand held. Fold in the mini M&M's at the very end when you see the mixture is ready so they won't break. If mixture seems dry you can add some extra butter or a few teaspoons of milk.
Drop by tablespoon onto ungreased baking sheet or covered in foil sheet. Press some extra M&M's onto the top so that you can see a few because a lot will get buried. Bake for 8-10 minutes or until edges are slightly browned. Carefully place on cookie rack or plate for cooling. 
Some of my M&M's broke during baking. Not sure what this is due to but I will probably get that perfected with time since I will be making many more baked goods this month.
