Mexican food is something of a daily thing around here. We usually go out for Mexican about twice a week, especially on Tuesdays when it is Taco Tuesday at our favorite Mexican place. But with such busy schedules, going out to eat is not always an option, yet the cravings are there for some authentic Mexican flavor. There is nothing more traditional in Mexico than tamales, but we don't exactly know how to make them, besides making tamales is a 2-day event and ain't no one got time for that! When game day rolls around and the family gets together, I head to the frozen aisle at Walmart and pick up a few boxes of Delimex.

To make it even better, you can make your own salsa to give it a homemade feel and taste. Here is my recipe for Salsa Fresca de Mango which is perfect for pairing with Delimex Tacos and Tamales.
Salsa Fresca de Mango
1 can of canned mangos
3 medium tomatoes
1 white onion
4 chiles serrano
pinch of salt
pinch of pepper
Dice tomatoes, onions and chiles. Drain can of mangos and pour into a bowl, add the rest of the components including salt and pepper. Mix and put in fridge to chill. Serve cold.
This fresh salsa is delicious and all the colors really give your plating a colorful and special feel, no one is going to guess you put it together in about ten minutes.
