Are you getting ready to watch the big game next month? We are all pretty excited and of course we have all been planning our menus for our big family potluck the day of the game. This year we are going to be in the middle of a move and we won't be able to cook out on the grill like we usually do. I still wanted to come up with something that will give us the flavor of grilling that we all love, but at the same time I want something easy that doesn't keep me in the kitchen all day. 

Chicken & Veggies Kabobs (on the stove)
4 servings / 2 kabobs a piece

Kabobs:
1 pound boneless chicken breast cut into cubes
1 yellow pepper diced into 1 inch pieces
1 orange pepper diced into 1 inch pieces
green pepper diced into 1 inch pieces
1/2 a purple onion diced into 1 inch pieces

Marinade:
1/4 cup olive oil
1 garlic minced clove 
1 teaspoon cumin powder
1 tablespoon of honey
dash of salt
1 1/2 tablespoons of La Morena Chipotle Peppers sauce


Instructions: Combine all ingredients into a dish and place chicken breast inside for at least 30 minutes. If you have more time, you can set this into a plastic bag and refrigerate for a few hours. 


While the chicken is marinating, dice all your veggies. 


When you are done marinating the chicken, dice into cubes and you can put your kabobs together. I am using wooden skewers found in any store. 


Over medium heat you're going to cook the kabobs for about 15 minutes, turning them every few minutes to avoid burning. I had started off with some zucchini slices but realized they were not letting the chicken cook evenly so I took them out and grilled them separately. 


The end result was so juicy and flavorful, plus so colorful. Warning, with 2 tablespoons of La Morena Chipotle Sauce they came out pretty spicy, you might want to use one. We like very spicy food, and La Morena delivers that authentic Mexican flavor and spice just right, every time.


I purchased La Morena Chipotle Peppers at Cardenas, along with all the other ingredients for these kabobs. They are so easy to prepare and everyone loves them including the kids. I can't wait for our move to be over and warm weather to return so we can make them on the actual grill, but for now these are just as good.
