#KnorrCelebrations : Caldo de Camaron

Because I know many of you observe the season of lent, I want to share one of my favorite ways to enjoy shrimp. This is a: hearty, delicious, warm, spicy bowl of shrimp stew that the whole family will love. 



Like many modern families, ours is a busy one. It's not everyday of the week that we can sit together to share a meal, therefore when it does happen I like to make sure that we are having something really comforting and good. This sopita de camaron is going to become one of your favorite meals year-round, but it is also perfect for preparing during Lent. Lent doesn't have to mean that we can't enjoy foods full of flavor, especially when you have so many ways to get creative with fish & shrimp. As long as you have  fresh & delicious ingredients, you can make some really good eats.

Now with a cartful of ingredients, I am ready to prepare some of my favorite dishes. Let me share with you this easy-to-follow recipe for some of the most delicious Caldo de Camaron you will ever try!


Shrimp Stew - Caldo de Camaron (serve 6)

Ingredients:
1lb shrimp cleaned 
3 large carrots diced
2 large potatoes diced
1 celery stalk diced
2 medium squash diced
1 medium chayote diced
1/2 cabbage chopped
1 cilantro bunch
10 Chile Peppers
3 tomatoes 
1/2 onion 
1 garlic clove 
1 tbsp olive oil
6 cups of water
Knorr Shrimp Flavor (2 cubes)
1tsp salt (to taste)
1tsp black pepper (to taste)

Preparation:
  • Start by cleaning shrimp and cutting all vegetables minus: tomato, onion, garlic, cilantro. 

  • In a medium saucepan with 3/4 cups water add tomato and simmer for about 10 minutes. Drain and place in blender.
  • In a small pan that's hot add olive oil, add chile peppers and turn steadily for about 20 seconds, add those to blender once finished. 
  • Add garlic, onion plus 1/2 cup of the water from the tomatoes into blender and blend for two minutes.
  • Using the pan with olive oil, strain the entire sauce into it and cook for about 10 minutes

  • In a soup pot add 6 cups of water and bring to a boil. Once boiling add all chopped veggies minus the squash or which can go in 15 minutes later because it cooks faster. Boil for 25-30 minutes until veggies are cooked. Add sauce which has been simmering on the stovetop, 2 cubes of Knorr Shrimp Flavor, salt and pepper stirring occasionally for 5 minutes.
  • Add shrimp for 4-5 minutes, until pink. In the last moments add the cilantro bunch (this is just for added flavor)

Serve hot
