Summer is just about here for everyone, but here in the Inland Empire, it's basically here. Starting last week temps started going over 97 degrees, which is so hot. That means it's time for summer refreshments. This means fresh, refreshing lunches paired with Lipton Fresh Brewed Iced Tea which I purchased at Walmart. I really do love going to Walmart and stocking up on Lipton because we basically live on iced tea during the summer and will go through several pitchers a day.
I was thrilled to find Lipton Cold Brew, which is a very simple way to make iced tea with no brewing necessary! That means that we can now make iced tea without the extra hassle of brewing the tea bags and we can be enjoying our iced tea that much faster.
How easy is Lipton Cold Brew Iced Tea to make? Add 8 cups of cold water, pop in two tea bags. Allow to cold brew for 5 minutes while dunking frequently, then remove tea bags. Sweeten to taste and serve over ice!
I wanted to put together a fresh and quick lunch to enjoy with my mom and sisters today since we were all home for the first time in weeks. Now that we had the perfect tea, made within minutes, it was time to pair it with a light and refreshing meal. I don't like spending extra time in the kitchen during the summer cooking, and we all prefer a cool lunch anyways, so I decided to make a Summer Salad. This is salad can also be put together so fast and you only need a few things that you probably already have in your pantry and fridge.
Summer Salad (4 portions)
1 can of chunk chicken breast
1 whole round tomato
1 cup chopped cilantro
1/2 chopped green onions
2 tbs extra virgin olive oil
1 medium chopped avocado
1 small lime
a pinch of pepper
a pinch of salt
Directions: Drain your can of chicken and pour into a mid sized bowl, separating the chicken a little bit with a fork. Add your tomato, cilantro, avocado and green onions. Pour extra virgin olive oil, salt and pepper on top generously. Squeeze lime on top and then very gently toss your salad until everything is coated evenly. That's it!
Between Lipton Iced Tea and this summer salad, I think it took us all of 15 minutes to put this delicious lunch together. This is one of those perfect summer meals that you can put together after the end of a long day or on a weekend when you want nothing to do with the stove. This summer we're going to be doing a lot of lazy pool days with the kids and this salad is going to be one of our main dishes while Lipton Fresh Brewed Iced Tea is going to be our go-to summer drink.
